Mexican Mole (Chocolate Sauce)

Ingredients (4 servings) :

1 bottle of Country-style Sauce (Sauce campagnarde)

4 whole chicken thighs (cooked)

4 cups of chicken broth

1 slice of bread or 10 soda crackers (this will help thicken the sauce)

1 clove of garlic

3 cloves

6 black peppercorns

120 grams of Abuelita or Ibarra chocolate (on sale at latin or chinese grocery stores) or 100 grams of dark 70% chocolat/ pure cacao mixed with 4 tablespoons of sugar

1/2 teaspoon of cinnamon 

1/2 teaspoon of salt

1/4 cup of ground almonds

2 tablespoons of roasted sesame seeds

 

Directions

1.-  Mix all ingredients (except the chicken) in a food processor 

2.- In a saucepan, heat the mix and let it boil for about 5 minutes, until it thickens. If your Mole is too dense, just add a little bit of chicken broth.

3.- Serve chicken thighs and pour the Mole sauce on top. Decorate with sesame seeds and serve with white rice.
