- 1 cup herb tomato sauce (see below)
- 2 tablespoons Traditional Hot Sauce (Sauce Traditionnelle) or to taste.
- 2 tablespoons tomato paste
- 350 grams mozzarella, grated
- 5 mushrooms, sliced
- ½ red bell pepper, sliced
- ½ onion
- 150 grams chorizo or salami, sliced
- 125 ml olives
- Dough (see below)
Preheat oven to 380’F
On a flour-covered surface, use half of dough and stretch it out into a disc of 35 cm diameter. Place on a pizza stone.
Mix herb the tomato sauce with the tomato paste and the Traditional Hot Sauce.
Spread the sauce mix on the pizza base, add the grated cheese and top with mushrooms, chorizo, onion, bell pepper and olives.
Bake pizza for 18-22 min.
More Traditional Hot Sauce can be added to taste.
Pizza Dough - Ingredients
- 1 1/4 cup lukewarm water
- 2 1/4 teaspoons instant yeast
- 1 teaspoon sugar
- 2 tablespoons olive oil
- 4 cups all-purpose flour
- 1 teaspoon salt
Combine water, yeast and sugar in a bowl. Set aside for 5 minutes, until foamy.
Combine flour and salt, creating a well in the centre. Slowly pour in yeast mixture and olive oil, until a soft bubble is formed. Sprinkle flour on dough to keep it from sticking.
Brush a bowl with oil before putting mixture inside. Cover with a clean cloth. Set aside for 30 minutes in a warm and draught free place, as dough rises.
Divide dough in two parts. Knead one half; the other half can be frozen and used later.
Herb Tomato Sauce - Ingredients
4 tomatoes, diced
4 cloves of garlic
Salt and pepper
1/2 teaspoon Italian Herb Blend
½ teaspoon dried oregano
3 basil leaves
1 teaspoon olive oil
2 tablespoons Traditional Hot Sauce (Sauce traditionnelle)
2 tablespoons tomato paste
Heat olive oil in a casserole, stir garlic and tomatoes. Add remaining ingredients. Simmer uncovered for about 25 min. until water evaporates, stirring occasionally. Use mixer at the end for better texture. Add Traditional Hot Sauce and tomato paste.
